Start selling ready to eat food products as cheese, fish and meat requires a highly hygienic cycle of production; and to confirm the hygienic quality of this cycle RIIL started with MACRO Microbiological traceability investigations on every point of the production cycle.

Safe, hygienic ready to eat food products reach their customers after strict hygienic plan for the production cycle provided by RIIL.

MACRO started a new service in their retails that selling ready to eat cheese, meat (chilled and vacuumed) and fish; so after successive cooperation with RIIL in analyzing goods in their branches according to Egyptian Standards requirements.

They need RIIL team to start traceability investigations to the whole cycle of selling those products with their accredited - from DAkkS - method for swab technique (ISO 18593/2004) from the receiving area of each product (fish, cheese and meat) then tools used in the process as knifes and scales, workers in each area plates used for packaging till the ready to be sold products reaching around 460 microbiological covering the whole process during 2013.

Results

RIIL traceability investigations lead MACRO to concentrate the requirements as strict sanitation to the whole process; Accordingly, they provide their customers with a safe, hygienic and good quality ready to eat food products.
